Homemade pesto is one of those Summer favorites that you wish you had much later in the year. It's ridiculously easy to make so give it a try while the basil is still fantastic. You'll be really happy come winter time.

Pesto Ingredients:

2 cups basil leaves - cleaned with stems removed
2-4 medium garlic cloves - peeled
1 cup pine nuts or walnuts
1 cup olive oil or till the consistency is how you like it
1 1/4 cups freshly grated parmesan & romano cheeses
lemon juice
salt & pepper to taste

This recipe freezes really well so make lots! If you want less fat, substitute lemon juice for some of the olive oil
